muffins are gone, i thought it was time to put another apple to use. this time? in cookies! i love oatmeal cookies and how they lend themselves so well to playing around with different fruit/nut/spice combinations. this time i left out the nuts and went for finely chopped apples and dried cranberries with a hint of cinnamon and ginger.
